[Recipe] Dr Seuss Frittata

This delicious recipe is an easy way to get your kids to eat spinach, dill and leeks. Making a Green Eggs & Ham Frittata takes about 30 minutes and will give your kids the nutrients they need to keep their eyes healthy. This recipe yields 6 servings.

Ingredients:

  • 8 large Eggs
  • 1 1/2 tsp Dried dill
  • 1/4 tsp Salt
  • 1/4 tsp Pepper, freshly ground
  • 2 tbsp Extra-virgin olive oil
  • 2 Leeks, white and light green parts only, diced
  • 400g Baby spinach, chopped
  • 1/2 cup Ham, diced
  • 1/2 cup Havarti cheese (semi-soft cheese), shredded

Method:

  1. Preheat the oven to 220°C (450°F).
  2. In a medium mixing bowl, whisk the eggs, dill, salt and pepper.
  3. Heat a large pan over a medium heat. Add the oil and then the leeks and cook until softened. Stir continuously as they might burn.
  4. Then add the Spinach and Ham; and cook for 1 minute until the spinach has wilted.
  5. Remove from heat and pour the ham mixture into a oven proof dish. Make sure to spread the mixture evenly.
  6. Pour the egg mixture on top.
  7. Sprinkle with cheese and place in the oven for 10-15 minutes until cooked through.
  8. When the frittata is nice and golden, remove from the oven and rest for a few minutes.
  9. Serve with potato wedges or salad.

NOTE: This dish can be served hot or cold
