[Recipe] Chocolate & Strawberry Ice Cream

This delicious recipe is easy to make. You will need an ice cream maker.

Ingredients:

  • 1 1/2 tsp unflavoured Gelatin
  • 1 tbsp Water
  • 3 cups low-fat Milk, divided
  • 3 large Egg yolks
  • 395g Sweetened condensed milk
  • 1 Vanilla pod
  • 3/4 cup fresh or frozen strawberries, chopped
  • 1/4 cup mini chocolate chips or cocoa beans

Method:

  1. In a small bowl add the water and pour the gelatine over. Set aside. Stir mixture once or twice while you’re making the ice cream base.
  2. In a large saucepan, on a medium heat, heat 1 1/2 cups of milk.
  3. Cut the vanilla pod lengthwise and scrape out seeds. Add seeds and vanilla pod into the milk.
  4. Heat the vanilla, milk mixture until its starts to steam. Remove from heat.
  5. In a mixing bowl combine the egg yolks and condensed milk. When fully combined add to hot milk mixture. Combine by using a whisk.
  6. Place mixture back onto a medium heat, for 3-5 minutes. DON’T boil, as the mixture will curdle.
  7. Remove from heat.
  8. Strain custard through a sieve into a large mixing bowl.
  9. Add the softened gelatine and whisk until fully combined.
  10. Whisk in the last 1 1/2 cups of milk.
  11. Cover and place in the fridge to cool for about 2 hours. DON’T put the mixture into the freezer!
  12. Remove from fridge and whisk the mixture before pouring it into the ice cream maker.
  13. Follow the manufacturer’s instructions.
  14. During the last 5 minutes, add the strawberries & choc chips or cocoa beans.
  15. Serve and enjoy!

Notes:

  • You can store your ice-cream in the freezer for up to 1 week.
