[Recipe] Berry ice lollies

Summer is almost coming to an end in South Africa and will soon start in the rest of the world, thus I thought I’d share this ice lollie recipe. Although, people like me will find this recipe handy throughout the year, it’s never too hot or too cold for ice lollies!

Giving these lollies to your children as a treat, is a lot healthier than conventional lollies or even ice cream. They almost never figure out what it’s made of, just make sure that they aren’t there when the prep is being done. Another great way to make ice lollies is to freeze normal 100% fruit juice in lollie moulds, it tastes different than before freezing and they can almost eat as much as they want.

This recipe makes about 10 lollies .

What you’ll need:

  • 75g Blackberries
  • 150g Raspberries
  • 4 tsp Honey
  • 300g Greek yogurt (vanilla, honey or coconut flavour, depending on your taste)
  • About 10 Ice lollie moulds

Method:

  1. Mash the Blackberries with a fork.
  2. Add half of the honey and mix
  3. In a separate bowl do the same with the Raspberries
  4. Add the rest of the honey to the Raspberries and mix
  5. Get your moulds ready and layer alternate spoonfuls of yogurt and mashed fruit
  6. Place moulds in the freezer overnight
  7. Next day……
  8. Serve and enjoy!

HELPFUL HINT: To get the ice lollies out of the mould dip them briefly in water until they slide out  without effort.
